Penghu Island: "The world’s best secret islands"

The Twin Hearts Stone Weir in Chimei, the Penghu Islands, is piled with stones in the shape of two hearts. It was built to catch fish by the local residents as the fish would be stranded in the hearts when the high tide recedes. (CNA)

Flying to Dresden, Germany tomorrow

Tea of Today: Muzha Tieguanyin Tea
How's the weather in your city today?
We had a rainy and cold day in Taipei and actually it's the typical weather we have in winter. To drink tea in such a cold day, the tea with the mild to heavy fermented will be very matched, therefore, black tea and Puerh could be the choices. What about Oolong? There are so many different kinds of Oolong, which one can be a better choice? We would like to suggest the heavy fermented and roasted Tieguanyin Tea for the day. But here we are not talking about the Tieguanyin Tea with the very light fermented which is very popular in Fujian, Guangdong and some areas of China, that is tasted like Baozhong Tea or High Mountain Oolong Tea won't be the one we say for the cold day here.
The Muzha Tieguanyin Tea we had today was harvested in November 2006 and since then it was roasted by the tea farmer every year with the traditional method (used electricy to roast instead of "charcoal" for a better control on temperature) before we ordered in. It's a kind of tea going to be the "Aged Tea" and should be roasted every year if we'd like to store it well.
This Muzha Tieguanyin Tea was made of the sort of tea tree of Tieguanyin, we call it the "Real or/and Right Tieguanyin Tea" as there are many Tieguanyin teas made of other types of tea trees.
The liguid of tea looked darker than the tea liquid of High Mountain Oolong Tea because it has been roasted for many times, so the color of tea liguid shouldn't be looked like green or honey. The taste of the tea certainly was stronger than light fermented Oolong tea, that was also the reason we chosed it for today.
How to keep the dried tea well? To vacuum it in an aluminum foil bag and avoid the air and wet is the best way, or seal the tea bag well in a good way and put it into a ziplock can also be a good choice at home.
The Tieguanyin Tea which has been deep-roasted by charcoal will be introduced next time, in the cold day like today.

The Xmas tea packages to Tokyo

All the Xmas tea packages ordered by Ms. L. have been sent out to Tokyo this afternoon, from Taipei, by EMS.
We are the familiar customers to the staffs in the post office we usually go to. When they saw us brought the packages and stepped into post office carefully again, they stood up right away and helped us to carry the packages. This post office is very close to us, thank God.
We'd like to take some photos with our packed prodcuts in post office for Ms. L. (actually she didn't reqire us to do that), but at the end, we all forgot about it as we concentrated on what we were doing - writing & posting - so much. But we believe that the receivers in Tokyo will be very surprised by receiving the presents from Ms. L., we think that will be a touching and exciting moment when they are opening the presents!
We hope the receivers enjoy the teas from Taiwan and have a Merry Christmas!

The tea map of Taiwan
Taiwan has the special cultivation environment. Tea plantations can be found from north to south on the whole island. The growing areas of Taiwanese tea are situated along the Central Mountain Ridges and its branches, where the drop of vertical distribution from sea level is significant, with ample sun exposure and the Black Tide ocean on the east.
With an island climate, which is cold and wet in the winter and hot and rainy in the summer, coupled with the acidic to mild acidic soil with a 4 to 6.4 Ph value, those make Taiwan to be an ideal area for the cultivation of tea trees. So that there are numerous tea farms in Taiwan which have won for themselves a lasting fame as a renowned quality tea production region in the world.

The performances of Cha Xi in Taiwan
"Cha Xi" is also an art in tea culture. The host/hostess expresses himself/herself by different Cha Xi. Cha Xi can be displayed and changed due to different seasons, teas and venues etc.. The host/hostess makes the tea for the guests.
There were several Cha Xi performances held by The Chinese Art Of Tea Craft Union in Taiwan, the photos were taken before the ceremonies of Cha Xi performances.
